Red Velvet Cupcakes

When I'm not chatting to you all via social media or chasing after my little ones, I enjoy a cupcake or two. Which is good because I also enjoy baking!

So today I'm sharing with you my favourite cupcake recipe, Red Velvet Cupcakes. Yum! I first discovered this recipe via The Cake Mistress and have made some minor changes after baking them several times.

You will need:

Cupcakes

60 g Unsalted Butter (Room temp)

150 g Caster Sugar

1 large Egg (Lightly Beaten)

2 tablespoons Cocoa Powder

20 ml Red Food colouring

1/2 teaspoon Vanilla Extract

120 ml Buttermilk (Note: I cheat and use milk with added lemon juice. See here for more)

150 g Plain flour

Small pinch of Salt

1/2 teaspoon Bicarb Soda

1 1/2 teaspoon White wine Vinegar

Cream Cheese Frosting 

300 g Icing sugar (Sifted)

50 g Unsalted butter (Room Temp)

125 g Cream Cheese (I leave it out for 5-10 minutes so it is slightly soft)

Cupcake Directions:

Preheat the oven to 160 degrees and line a 12-hole cupcake tin cupcake cases.

Place butter and sugar in a bowl and beat until light and fluffy. Slowly beat the egg in.

Mix the food colouring, cocoa powder and vanilla extract until it makes a thick paste and add to the butter and sugar mixture. Beat until the colour is mixed evenly.

Using an electric mixer on a slow speed, slowly had half of the buttermilk until just mixed followed by half of the flour. And then repeat with the remaining buttermilk and flour.

Add the salt, bi-carb soda and white wine vinegar, beat until just mixed.

Spoon mixture into cupcake cases and bake for 20-25 minutes (Helpful hint: to test if they are ready, lightly press the top of the cupcake and it should 'bounce' back)

Allow the cupcakes to cool completely on a wire tray before frosting.

Cream Cheese Frosting Directions:

Beat butter and icing sugar until combined.

Dice your block of cream cheese and add cubes slowly while beating until the mixture is completely combined.

Continue beating until mixture is light and fluffy and pipe onto the cooled cupcakes

And the most important step...

Eat them!
